Indian Vegetarian Recipe: Apple Raisin Chutney

Apple Raisin Chutney

Mildly Spiced, Sweet Chutney Recipe, Delicious with an Indian Vegetarian Meal

Apple Raisin Chutney is a cooked chutney recipe that's wonderful with simple Indian vegetarian recipes like Spicy Tofu Rice Pilaf, Simple Mung Dhal, Carrots and Peas With Cumin, and Indian flatbread - Chapatis.

Chutney recipes are traditional Indian condiments, often prepared from raw ingredients, which balance meals Ayurvedically, ensuring that all six tastes are included - sweet, sour, salty, pungent, bitter, astringent.

Use organic ingredients for apple raisin chutney if you possibly can, for the best taste, and also so you aren't eating concentrated amounts of pesticides and herbicides with your chutney.

Approximately 1 1/2 Cups or 8 - 12 Servings: Substitute pears for apples if you prefer. Leave out the oil for a fat free version.

Apple Chutney Ingredients:

  • 4 cups peeled and finely chopped organic apples
  • 1 cup organic raisins
  • 1/2 cup organic raw cane sugar
  • 1/2 cup water
  • 1/4 cup lemon juice
  • 1 Tbsp apple cider vingegar
  • 1 tsp salt

  • 2 Tbsp peeled & minced fresh ginger
  • 1 Tbsp safflower or sunflower seed oil
  • Optional: 1/4 - 1 tsp cayenne powder
  • 1 1/2 tsp brown mustard seeds
  • 1 tsp gr coriander seed
  • 1/4 tsp gr. cloves

Directions:

  1. Fry the mustard seeds in oil until they start to pop. Add the other spices and fry for a minute until heated through.
  2. Combine all ingredients in a large stainless steel cooking pot
  3. Bring to a boil, reduce heat to medium low
  4. Cook, stirring frequently, until the apples are soft and the mixture is thick
  5. Transfer to a sterile glass jar, with a tight lid
  6. Cool, and store in refrigerator
