Carrots & Peas With Cumin

Carrots, Peas & Cumin (Gajjar aur Matar ki Sabji): Peas & carrots are on everyone’s grocery list, but we'll bet you've never had them like this!

Serve with rice, couscous, quinoa, or other Indian dishes such as Simple Mung Dhal or Curried Chick Peas

Ingredients:

  • You'll need a heavy weight sauté pan for this recipe
  • 3 carrots, peeled and cut into thin rings
  • 1 cup frozen peas, thawed
  • 1/2 medium red onion, finely chopped (optional)
  • 1 tsp grated ginger
  • 1/2 tsp cumin seeds
  • 1/4 tsp turmeric powder
  • 1/4 tsp cumin powder
  • 1/8 tsp red chili powder (optional)
  • 1 Tbsp minced cilantro (optional)
  • 1/2 Tbsp lime juice
  • Optional: Salt to taste
  • 1/2 Tbsp Oil
  • Water as needed

Directions:

  1. Heat the oil in a wide pan
  2. When hot add the cumin seeds. After the seeds sizzle, stir in the chopped onions
  3. Fry until the onions turn translucent. Then, add the ginger, cumin and turmeric powders. Stir
  4. Mix in the red chili powder, if using. Stir
  5. Add the carrots and salt to taste. Cook covered for about 5 minutes
  6. Stir in the green peas and cook covered on medium flame for further 2 minutes
  7. Sprinkle water if the vegetables stick to the bottom of the pan
  8. Mix in the lime juice and cilantro, if using. Stir
  9. Remove from the flame and serve hot with bread or rice
  10. Tip: The red chili powder adds a nice zing to the dish. If using, adjust it to suit your taste
  11. Variation: Fresh parsnips can be substituted for the carrots
