Light, fluffy and oh so chocolatey vegan chocolate cupcakes are perfect for school birthday parties, Valentine’s Day, random Mondays, your pet iguana’s birthday ... really, when is a chocolate cupcake ever a bad idea?
For a children's party, we like to make these with vanilla butter cream frosting, and cover them with sprinkles. For a Valentine's Day treat, you may prefer chocolate frosting - with or without sprinkles. Naturally, these cupcakes are also delicious plain.
Warning: When you make these chocolate cupcakes, be prepared for people to moan, “Oh my god these are so good!” over and over as they eat them. If anyone complains that they're not healthy, offer them an apple!
Cooking Tips: Best baked in paper cupcake liners. Wait until they're completely cool before icing them.
