A Semi-Healthy Snack or Breakfast With A Glass of Non-Dairy Milk

We make oatmeal raisin cookies as a semi-healthy treat. If we really were bent on eating something healthy, we'd just cook the oatmeal with the raisins.

But these oatmeal raisin cookies are so good, we eat them for breakfast without a twinge of guilt!

Besides being delicious, dairy-free, and almost healthy, oatmeal raisin cookies are quick and easy to make - and chances are good you've got all the ingredients.

Enjoy with hot apple cider as a winter treat, or a glass of non-dairy milk as a healthy snack (or breakfast).

Makes 3 Dozen 3 inch Cookies

Cookie Ingredients:

  • 1 3/4 cups all purpose flour (use whole wheat pastry flour or gluten free mix if you like)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup vegan spread, room temperature (Earth Balance is our preferred brand)

  • 1 cup light brown sugar, packed
  • 1 Tbsp lemon juice mixed with 1/2 cup non-dairy milk
  • 1 Tbsp vanilla extract
  • 2 1/2 cups quick oats
  • 1 cup chopped walnuts
  • 1 cup raisins

  1. Preheat the oven to 375 degrees
  2. Combine the flour, baking soda, and salt and set aside
  3. Cream the vegan spread and sugar
  4. Beat in milk mixture and vanilla extract
  5. Gradually stir in flour mixture
  6. Stir in quick oats, raisins and walnuts
  7. Drop by the tablespoonful onto ungreased cookie sheets
  8. Bake cookies for about 10-12 minutes until just beginning to brown around the edges
  9. Remove from oven, and transfer to cooling racks using a metal spatula
