Easy, Healthy, Low Fat, Low Carb, But Festive Holiday Dessert Recipe

Poached Pears

We came up with this poached pear recipe when we needed a low carb, low fat, healthy but sweet and festive dessert recipe.

Poached pears are simple and easy to make, with any kind of firm, ripe pears. We used Bosc pears, which are one of the sweetest.

Poached pears are a perfect fit with our Thanksgiving Lite Menu

Total prep & cook time: 20 min

8 Servings

Nutrition Data Per Serving: 105 calories, 28 g carbohydrate, 0 g fat, 3 mg sodium, 2 g dietary fiber, 0 g protein, 27% RDV Vit C. Estimated glycemic load: 8. Very low in saturated fat, sodium & cholesterol, good source of dietary fiber, very good source of Vit. C

Ingredients:

  • 4 large Bosc or other sweet, firm, ripe pears
  • 1 cups unsweetened white grape or pear juice
  • 1 cups water
  • Optional: Use 100% water to reduce sweetness and calories
  • 1 Tbsp lemon juice
  • 1/2 cup sweetened (or unsweetened) dried cranberries
  • 1/2 cinnamon stick
  • 6 whole dried cloves
  • 4 whole green cardamom pods

Directions:

  • 1. Peel, quarter, and core the pears
  • 2. Arrange pear quarters in a single layer in a wide pan (sauté pan works well)
  • 3. Add the whole spices and cranberries
  • 4. Pour over the fruit juice, water and lemon juice
  • 5. Bring to a simmer (not a boil), reduce heat, cover and simmer 10 - 15 minutes, until just tender
  • 6. Remove from heat and allow to cool
  • 7. Pick out the whole spices before serving, using a small spoon or rubber spatula
  • 8. Serve in the poaching liquid

8 Servings Poached Pears: Reduce the calories and sweetness by using water instead of all or part of the fruit juice, and unsweetened dried cranberries.
